

Cinta Senese soppressata is a sausage made by the Azienda Agricola Il Ruscello with wild pigs. For years the company has been producing gluten-free Tuscan cured meats. Soppressata, also known as Tuscan soprassata, is a sausage made of coarse fragments of pork meat wrapped in cloth. It has an elongated cylindrical shape and an intense aroma. The name derives from the fact that the foods that compose it are enclosed in a sort of canvas bag and then subjected to pressure by a weight to create a compact mass.
