
Rugiada di Bosco fresh organic ricotta, produced with only 100% own milk, milked from the cows of the Poggio di Camporbiano company. Processed by is a rather dense and grainy looking dairy product. Its texture is soft, white in color and with a sweet and delicate flavour. Produced with cow's milk , organic ricotta is excellent enjoyed alone even as a dessert. However, being very versatile, it is used in many preparations such as fillings for ravioli, tortellini, panzerotti, savory pies, to season pasta and in pastry making for the preparation of creams and cakes. The coagulation process of the whey proteins takes place at a high temperature (80-90 °C): the whey is then literally re-cooked (hence the name "ricotta").
