The "Selvatica" Cinta Senese salami is a typical sausage from our region, the classic finocchiona, made with a cut of pork. This variant of salami is comparable to the classic Tuscan finocchiona. Fennel seed soaked in red wine enriches its aroma. It is made with pork shoulder (lean part), pork belly and pork lard (fatty part), these ingredients, after having been ground and flavored and having obtained a mixture, are stuffed into special casings of various sizes and then tied. After being placed on trolleys it is stewed for 7 days, and matured for at least 30 days. The Azienda Agricola Il Ruscello makes its gluten-free cured meats with pigs raised in the wild.
