Tuscan ricciarelli are made with almonds, sugar, egg whites and honey. They are prepared with almond paste, worked for a long time before adding candied orange peel and vanilla flavouring. The mixture obtained is cut into small lozenges, then placed on a wafer leaf. After cooking in the oven, the wrinkled and cracked surface is coated with icing sugar. In the 14th century the ricciarello appears in Volterra. Legend has it that it was the knight Della Gherardesca who introduced them with this name on his return from the Crusades, as it reminded him of the curled toe of typical Middle Eastern footwear. They are currently popular as a Christmas dessert. They are consumed with dessert wines, with Tuscan Vin Santo.
