Recognized with the PGI brand, the organic dry Zolfino bean is an ancient variety of legume originating from Tuscany. The characteristics of dried beans are: the almost absence of skin, the marked and decisive flavour, the excellent ability to withstand cooking. It takes its name from the yellow color that characterizes it, just like that of sulphur. Also called butter bean due to the very thin skin which makes it very creamy when enjoyed in every dish. It is prepared by first soaking for a few hours, rinsed and boiled in cold water for approximately 1 hour (20 minutes with a pressure cooker). These organic legumes are also good with extra virgin olive oil, salt, black pepper, and chopped fresh herbs. A typical Tuscan legume.
