The boiled zolfino bean from Podere Pereto is a food with a very thin skin which however manages to always keep the organic legumes intact. These Italian legumes have a strong but delicate flavour, which is why they pair very well with fish. Also good sautéed in a pan with oil and garlic. A typical Tuscan legume, its origin is Pratomagno in the province of Arezzo. Its PGI label is fully deserved. Zolfino is an ancient variety of bean originating from Tuscany. Its characteristics are: the almost absence of peel, the marked and decisive flavour, the excellent ability to withstand cooking. The organic zolfino bean takes its name from the yellow color that characterizes it, just like that of sulphur. Also called butter bean due to the very thin skin which makes it very creamy when enjoyed in every dish.
