The winter uncinate black truffle from Nacci Tartufi is the best fresh truffle: it has a peel with large warts with the characteristic hook shape, which is why it is called uncinato. Also called Winter Scorzone, its harvest time begins on October 1st and ends on December 31st. It has a delicate and well-defined aroma and flavour, with notes of hazelnut, porcini mushroom and parmesan. Perfect for many uses in the kitchen, both cooked and raw. For four people, we recommend using 100 grams of hooked truffle. It can be used freshly grated or cut into flakes.
