Stracci Toscani are an artisanal pasta format from Pastificio Fabbri which comes from the reuse of the parts of the pastry used during the preparation of lasagna. Shorter than the latter, stracci are accompanied by meat and fish sauces or sauces based on chickpeas and rosemary. Also very good eaten plain with extra virgin olive oil. Also good with wild boar sauce. A Tuscan pasta made following pasta making and drying below 38°, guaranteeing an extraordinary ability to absorb sauces and maintaining cooking.
