The stone-ground einkorn flour is made by Podere Pereto with Italian legumes. It is an organic flour with a high protein concentration, ideal for athletes, those intolerant to gluten but also vegans. This stone-ground flour made using organic cultivation methods is suitable for both sweet and savory preparations. This flour comes from an ancient cereal recently recovered in agriculture. Triticum monococcum known as "monococcus" is the first wheat to be cultivated by man, it has a low concentration of gluten (about 7%).
