Podere Pereto's stone-ground organic durum wheat flour is made from the Cappelli durum wheat variety. An organic flour with good nutritional properties that comes from a type of Italian legumes selected at the beginning of the 20th century, widely cultivated in Tuscany. Durum wheat flour is ideal for the preparation of homemade pasta but if mixed with other flours it lends itself to any type of savory preparation such as pizzas and flatbreads. Podere Pereto flour is stone ground. Senatore Cappelli is in all respects an ancient grain, having been discovered and selected before modern industrial processes were introduced, replacing manual craftsmanship. Nazareno Strampelli, agronomist, discovered this grain, and in honor of Senator Cappelli he decided to name it as the senator himself had granted him some land he owned to carry out some research.
