The organic borlotti beans from Podere Pereto (BIO Toscana company) are Italian legumes produced using organic farming methods. Ideal for preparing soups and risottos. These dried beans need to be soaked for at least 12 hours. After soaking, rinse and pour into a pan with cold water. Cooking takes about 1 hour and a half on a low heat (40 minutes with a pressure cooker). They pair well with onion, mushrooms and cabbage. Also to be consumed cold, with fish, basil and other fresh herbs.
