Cherubino is the Vin Santo DOC of Chianti, produced by the Azienda Agricola Tacinaia with 95% Sangiovese red grapes and left to dry in the fruit cellar for a few months. After pressing the grapes, the resulting must is processed and aged in small chestnut and oak wooden barrels for at least three years, as per Tuscan tradition. Its prevailing color is golden yellow also tending towards red, its scent is honeyed and sweet, round and harmonious, with hints of dried fruits. Vinsanto usually pairs with cantuccini as one of the most typical Tuscan desserts, but also with baked biscuits, tarts and fine chocolate.
