This ancient variety of chickpea from Tuscany is suitable for cooking as a side dish, seasoned with oil, salt and pepper and can also be used in purées and soups due to its thin skin. Preparation: after soaking (we recommend up to 24 hours), rinse and then boil in cold water. Bring to the boil and cook for approximately 2 hours (40 minutes with a pressure cooker). Podere Pereto uses only natural Italian ingredients.
