Rustic Tuscan soup is a large classic traditional Tuscan dish based on beans and cabbage. In particular, the cabbage must be savoy and black. Pour the soup by adding water into a pan, start heating and as soon as it is hot add a drizzle of extra virgin olive oil, some slices of bread (better than the day before) or toasted ones. Here are some variations of this Tuscan bean soup: add some raw chopped red onion, or the rinds, the previously cooked "culetti" of raw ham.
