The Tuscan Vin Santo Corbellice DOC from the Tacinaia agricultural company is produced with Trebbiano and Malvasia grapes. Before fermentation the grapes are dried for at least 3 months in the "fruit cellars". Subsequently the grapes will be pressed and the must thus obtained is processed and aged in chestnut barrels for three years. Its color is amber, it has an intense aroma with persistent notes of dried fruit. Its velvety flavor also makes it delicate. Tuscan Vin Santo is to be enjoyed in company, with soft or crunchy cantucci, or at the end of the meal with good cheese. Vinsanto in Tuscany is part of the peasant agricultural tradition.
