Amelio Vin Santo DOC Bianco Pisano San Torpè. To make this noble Vin Santo Bianco Pisano you have to wait for the hand-picked grapes to be harvested at the end of September. The properly ripe and strictly healthy grapes are hung to dry for about 4 months, before being pressed with a special delicate and soft pressing. The fermentation and its necessary aging take place in oak barrels for at least 3 years. This is followed by refinement in the bottle for at least 3 months. Its color is amber and just right brilliant, its scent is decidedly of dried fruit, with notes of honey and ripe apricots, combined with spicy notes. The taste is sweet, warm and quite persistent with a good balance of good acidity and alcohol content. Perfect and ideal for any end of meal with our Tuscan cantucci , or with biscuits from the baked pastry shop , ice cream and spoon desserts.
