The rolled Cinta Senese pancetta from Nanni Guido's Il Ruscello farm has an intense flavour, excellent for pairing with croutons or fruit such as figs. Pancetta, unlike Tuscan rigatino, is a cut of pork belly, it is then trimmed to make it rectangular in shape, then salted and flavored in containers for 15 days. Subsequently the rind is removed, rolled up and stuffed into special packaging. After stewing for 7 days it moves on to the 30 day maturing phase. All Tuscan cured meats produced by Guido are gluten-free .

The product can be stored in the fridge from 0° to +4° with a maximum shelf life of 3 months. After opening, consume within a few days.
