Cinta Senese sausage is produced with pork shoulder, bacon and lard. These ingredients are ground and flavored to then obtain a mixture, stuffed into special casings, then stewed for 7 days, and matured for at least 30 days. All cured meats from Azienda Agricola il Ruscello are gluten-free. In Tuscany there is the custom of spreading fresh sausage on bread. Excellent with wild herbs, mushrooms and accompanied by toasted bread.
